This recipe is so much more than your average sauteed mushrooms. It is a great side dish to add some excitement to a meal.
1 Tbsp olive oil
3/4 cup shallots, sliced
1 cup cubed bacon
8 cups halved mixed mushrooms
1 Tbsp butter
1 Tbsp Litehouse® Instantly Fresh Salad Herb Blend
In a large skillet, heat oil over medium heat. Add bacon and cook for 4 minutes or until brown. Add shallots and cook for an additional 3 minutes.
Spoon out bacon and shallots onto paper towels to dry. Pour out half of the juices in the skillet. Return to medium heat and add mushrooms. Cover and cook for 4 minutes. Uncover and let liquid evaporate.
Add in the bacon and shallots and cook for 1 minute. Mix in butter, salad herb blend and cracked pepper. Serve immediately.
