Ingredients
- 1 cupCooked Quinoa
- 2 cupSpinach or Mixed Greens
- 1 eacan Chickpeas, drained and rinsed
- 1 cupDiced Cucumber
- 1 cupQuartered Cherry Tomatoes
- 1 eaLitehouse® Purely Balanced Lemon Basil Greek Yogurt Dressing
- 1 eaFeta Cheese
Directions
Cook quinoa according to package directions. Set aside and let cool.To assemble jar, start with desired amount of dressing. Add cooled quinoa, followed by greens, chickpeas, cucumber, tomatoes and feta. Seal jar and refrigerate for up to 3 days or enjoy right away.
