Porcupine Meatballs

What could make any meatball recipe even better? A little Hawaiian tang! Use healthy lean meat and add rice and a little Litehouse Tangy Orange Citrus for the best meatballs you've ever had!


3 lbs. very lean ground meat (Beef, Turkey or Chicken)
1 Cup Bread crumbs (about 4 heels)
1 tsp. coconut oil (to brown meatballs)
3 eggs
1 Tbsp. Litehouse® Instantly Fresh Mint
1 Tbsp. Litehouse® Instantly Fresh Salad Herb Blend
2 Tbsp. Litehouse® Instantly Fresh Spring Onions
1 cup Crushed Pineapple
2 cups cooked Jasmine Rice
1/2 a bottle of Litehouse® Sesame Ginger Dressing
1 cup Chicken broth


Mix ground meat, bread crumbs, eggs, 1/2 Tbsp. each of the Litehosue® herbs, pinapple, and rice in a large bowl; Form into meat balls with an ice cream scoop; Brown in a skillet with a tsp. of Coconut oil. Then in medium bowl mix 1 Cup of Chicken Broth and add ½ Tbsp. each Litehouse® herbs, Half a bottle Litehouse® Sesame Ginger Dressing. (You can add some Pineapple and or the juice to this as well.) Blend well with a fork or wire whisk. Pour in the bottom of a casserole dish or covered pan. Add browned Meat balls on top of the broth mixture. Cover with lid or foil and bake 350 degrees for about 20 minutes or until warmed through.
