Green up the family dinner scene by serving our Parmesan Broccoli Tots with Ranch Dip. Inspired by crispy ‘tater tots, this lower-carb, oven-baked, veggie-loaded rendition is a healthy finger food that the entire family will love! Serve it as a side dish to burgers or chicken or as a wholesome alternative to junk food appetizers.

There is a reason why mothers throughout time have universally demanded, “eat your broccoli!” This green cruciferous vegetable is rich in essential vitamins and minerals in addition to being a great source of dietary fiber. Not to mention broccoli is filling, yet low in calories, and surprisingly high in protein for a vegetable (5g protein per cup of broccoli).

And, with these Parmesan Broccoli Tots, there is no worry of feeling dishonest by smuggling vegetables into the kid’s dinner without their consent, as some parents do. The broccoli tots are overtly GREEN for goodness sake, there is absolutely no denying that a whole head of broccoli is the primarily ingredient. Other ingredients include a bit of Parmesan cheese, egg, seasonings and almond meal to hold it all together. By using almond meal as the binder, the recipe remains friendly for those on gluten-free diets and low-carb diets.

Parmesan Broccoli Tots Recipe with Litehouse Homestyle Ranch Dressing

Green up your dinner scene with these wholesome Parmesan Broccoli Tots paired with a side of ranch dressing for dipping. Oven-baked, gluten-free and veggie-loaded, it’s a smart finger food snack or side dish the whole family will love.

Ingredients
  • 1 lbsFresh Broccoli (to yield 3 cups chopped)
  • ½ cupParmesan Cheese
  • ⅓ cupAlmond Meal
  • 1 eaEgg
  • 1 tspOnion Powder
  • 1 tspMinced Garlic, from jar
  • ½ tspSalt
  • ½ tspWhite Pepper
  • 1 eaLitehouse® Homestyle Ranch Dressing

Directions

Preheat oven to 400°F.Break up the head of broccoli into large pieces.Bring a large pot of water to boil and add broccoli, blanching for 4 to 5 minutes (do not overcook).Drain the water from pot and immediately add cold water to stop to cooking process.Drain the water well and pat florets dry with towel.Add par-cooked broccoli to food processor and use the pulse function to chop into small pieces.Scoop out 3 cups of chopped broccoli and add to bowl. Stir in parmesan cheese and almond meal.In a small bowl, whisk together egg, onion powder, garlic, salt and pepper. Stir this into broccoli mixture until evenly combined.Take 1 heaping tablespoon of mixture and roll between hands to make an approximate 1” long oval log – they do not have to be perfect shaped. Lay baking sheet with parchment paper or silicone sheet. Continue making tots with remaining mixture.Bake in center rack of 400°F oven for 25 - 30 minutes, until looking set and turning very lightly brown on top (bottoms will be a little more browned).Serve with Homestyle Ranch Dressing for dipping.
