Well, well Valentine’s day is on a Sunday this year. I just love it when a holiday lands on a weekend. Surely this calls for some waffles being delivered right to my bedside at say 10am after I’ve slept peacefully the whole morning? That would be a total stretch around here but a girl can dream. I did lay a pretty big hint when I made these overnight cinnamon swirl waffles though. I was sure to tell him how easy they are and really stressed the overnight feature. Maybe if we get them ready together things will go my way. We’ll see!
I used to just have the dry ingredients mixed and ready for waffles but then thought, why not the whole thing? How great is it to roll out of bed on a weekend and fire up the old waffle maker! The cinnamon part of the waffles comes from Cinnamon Swirl Opadipity by Litehouse sweet Greek yogurt dip. The dip completely replaces the butter that you’ll find in most waffle recipes. Melting butter for waffles is just another step you can avoid with using cinnamon swirl yogurt dip instead. They come out of the waffle maker golden brown, crisp on the outside and nice and soft inside. We’ve frozen a few waffles for quick weekday breakfasts. You’ll have a good amount of the cinnamon swirl dip left in the tub so be sure to try it out on apple slices, on top of oatmeal, as a fruit pizza base and even added to smoothies. We’ve been using it all week!
To make the waffles extra luscious, serve them with a dollop of cinnamon swirl dip, syrup or whipped cream. Why not all three? If we’re getting into the spirit of Valentine’s day love. That’s right up there on the top of my list.
1 3/4 cups milk
1/2 cup Litehouse Cinnamon Swirl yogurt dip
2 cups flour
1 tbsp sugar
1 1/2 tbsp baking powder
extra dip or syrup for topping
In a large bowl, whisk the eggs, milk and cinnamon swirl yogurt dip together.
Add the flour, sugar and baking soda. Stir until just combined.
Place the mixture in the fridge over night or prepare the waffles right away using directions best suited for your waffle maker.
