These mini burgers are perfect to add some flavor to your meals! Try them as an appetizer or a main dish.
½ lb. ground beef
½ cup corn
1 large avocado, diced
2 small tomatoes, diced
1 tsp. lime juice
6 Ciabatta rolls, sliced in half
2 Tbsp. Litehouse® Instantly Fresh Red Onion
1 Tbsp. Litehouse® Instantly Fresh Cilantro
½ Tbsp. Litehouse® Instantly Fresh Ginger
2 Tbsp. Litehouse® Cotija Cilantro (optional)
Preheat the oven to 350° F. Cover a baking sheet with aluminum foil and spray with non-stick spray. In a large bowl, mix ground beef with Litehouse® Red Onions and Ginger. Form the mixture into 6 balls and press them down onto the baking sheet. Bake for about 20 minutes or until the meat done to your liking.
In a medium bowl, mix corn, avocado, tomatoes, Litehouse® Cilantro, and lime juice.
Spread Creamy Cilantro dressing onto the inside of the rolls (optional) and then layer the cooked meat and the arugula. Top the meat with the mixture and serve.
