This marinated white bean salad is one of my favorite recipes to prep for the week. It takes just minutes to whip up a batch, and leftovers continue to get better the longer it sits. However, if you don’t have time to make it, simply open a can of white beans (or chickpeas) and toss with a tablespoon or two of the Tzatzki Ranch dressing, then prepare the bowl as directed.
Like most meal prep recipes, these can be prepped ahead of time for simple lunch assembly or made as directed. If you plan on prepping the vegetables ahead of time, keep the cucumbers in water in a container in the fridge which will prevent them from drying out.
Couscous is a staple of Mediterranean cuisine and even though it looks like a grain, it’s actually a pasta! Instead of boiling it like other grains, you’ll steam it. For optimal results. Bring a cup of water to a boil, add the couscous then cover, remove from heat and let steam for 5 minutes. Remove the cover, then fork to break up any clumps. For additional fiber, seek out a whole wheat couscous option or sub in cooked whole-grain orzo or other small pasta shape as desired.
