This recipe is designed to be made in tandum as a meal prep trio with Balsamic Chicken with Quinoa, Roasted Carrots and Feta, Cajun Steak with Sweet Potatoes, Peppers and Jalapeños, and Feta Dill Tuna Lettuce Wraps
(3) 5 oz containers of tuna in water, drained
1/2 cup Opa by Litehouse Feta Dill Greek Yogurt Dressing
1 large red pepper, diced
1/4 cup sliced almonds
2 heads of butter lettuce
In a medium bowl, add the drained tuna, feta dill dressing and diced red pepper. Mix well.
Rinse 16 butter lettuce leaves and pat dry.
Divide the tuna mixture between four containers.
Keep the lettuce and almonds separate from tuna mixture until ready to eat.
Spoon a few tablespoons of the tuna mixture on each lettuce leaf and top with sliced almonds.
