Try this delicious holiday recipe with the kids for a different twist on breakfast!
¼ cup walnuts, chopped fine
½ Granny Smith or Golden Delicious apple
1 cup flour
1 ½ tsp baking powder
½ tsp cinnamon
¼ tsp salt
3 Tbsp. butter ¼ cup packed brown sugar
2 Tbsp. Litehouse® Gala Apple Cider or,
Litehouse® Honey Crisp Apple Cider or Litehouse® Litehouse Apple Cider
Preheat oven to 400°. Spray 16 mini muffin cups with cooking oil spray. Lightly toast walnuts in skillet, about 3-4 minuted. Seat aside. Core and peel apple and cut into ¼ inch dice. Into a bowl sift together flour, baking powder, cinnamon and salt. In a saucepan melt butter and stir in brown sugar. Remove from heat. Whisk cider into mixture. Add to flour mixture, add egg, stirring until combined well, but do not overstir. Stir in walnuts and apple. Put batter in muffin cups and bake 12-13 minutes, or until golden. While muffins are baking, make glaze: Boil cider 15 minutes, or until reduced to about ½ cup. Add sugar. Simmer, stirring, until syrups, about 5 minutes. While muffins are still warm, take a wooden pick and make several holes in top of each muffin. Brush warm glaze over muffins several times until absorbed (a 1” paintbrush used only for cooking works well for this).
