Chef Katie's Cucumber and Beet Salad

1 English Cucumber, peeled and sliced thin
15 oz. can sliced pickled beets
¼ cup toasted walnuts, chopped

2 Tbsp honey
¼ cup Litehouse® Blue Cheese Crumbles or Litehouse® Gorgonzola Crumbles
½ cup Litehouse® Bleu Cheese Vinaigrette or Litehouse® Big Bleu or Litehouse® Chunky Bleu Cheese or Litehouse® Original Bleu Cheese or Litehouse® Yogurt Bleu Cheese or Litehouse® Lite Bleu Cheese
2 tsp. Litehouse® Instantly Fresh Chives )


Lightly toss first 3 ingredients in a large bowl. Layer cucumber and beets on to serving plate. Top with nuts, Litehouse® Cheese, and Litehouse® Instantly Fresh Chives, lightly drizzle with honey to finish.
