Who doesn't love a bunt cake? Even better who doesn't love a mini bunt cake? Even better again; who doesn't love the flavors of fall? Combine them all and you'll get the best Caramel Apple Mini Bunt Cakes you've ever had!
2 cups flour
1 Tbsp. baking powder
½ tsp salt
1 cup sugar
4 Tbsp. unsalted butter (melted and slightly cooled)
1 cup applesauce
¼ cup Litehouse® Apple Cider (any flavor)
1 large granny smith apple peeled and minced
Litehouse® Low Fat Caramel
Preheat oven to 350 degrees. Grease 6 mini-bunt muffin pan. Whisk dry ingredients In a second bowl, whisk eggs well. Add sugar and whisk until thick. Add melted butter in 2 or 3 additions then add applesauce and Litehouse® Cider. Whisk just until combined. Add apple chunks and dry ingredients and toss together. Add applesauce mixture to dry mix folding in just until combined. Spoon into mini bunts and bake for 25-30 minutes. Let cool on wire rack and fill top indent with Litehouse® Low-Fat Caramel. Serve!
