Preheat oven to 400F. Line two rimmed baking sheet with parchment or foil and spray lightly with cooking spray. Whisk together egg, Litehouse Homestyle Ranch, 2 Tbsp Louisiana Hot Sauce, and salt in a medium mixing bowl. Stir in oats, onion, and chicken and stir until well combined. Scoop and form Tbsp-sized meatballs, using your hands to roll, and arrange on prepared baking sheets. Lightly mist cooking spray over the top of meatballs to help them crisp. Roast, rotating once halfway through, until meatballs are lightly browned and cooked through, about 10 minutes. Transfer to a large mixing bowl. Heat remaining ¼ cup Louisiana Hot Sauce and butter in a saucepan until butter is melted. Pour over meatballs and toss gently to coat, then transfer to a serving platter and serve with Litehouse Chunky Blue Cheese and toothpicks for dipping.
