Belgian Endive Salad with Bacon & Blue Cheese Recipe

3 small heads Belgian endive, cored and cut crosswise ½ inch thick
1 cup seedless red grapes, halved
2 scallions, green parts cut into 1 inch lengths
½ cup walnuts, chopped
Black pepper to taste
1/2 cup chopped bacon bits (optional)
½ cup Litehouse® OPA Blue Cheese


In a medium sized mixing bowl, toss together all ingredients and top with Litehouse® OPA Blue Cheese dressing. Season to taste with black pepper and serve.
