Baked Apples with Caramel

Serves 8 | Finish in 1 hour 5 minutes

8 medium apples - Rome, Macintosh or Granny Smith
1/3 cup packed brown sugar
1/4 cup walnuts, chopped
1/4 cup dried cranberries or raisins
Grated zest of 1/2 a lemon (optional)
1/2 tsp. cinnamon
Dash of nutmeg
1/4 cup Litehouse® Litehouse Apple Cider
1/2 cup of Litehouse® Butterscotch Caramel Dip
Or any of the following:
Litehouse® Old Fashioned Caramel
Litehouse® Low Fat Caramel
Litehouse® Chocolate Caramel


Preheat oven to 350°. Core apples from top, stopping one inch from bottom. Set in shallow 1 1/2 quart baking dish large enough to hold them without touching. Combine brown sugar, walnuts, cranberries, lemon zest, cinnamon and nutmeg. Spoon into apples, scattering remaining into baking dish. Dot apples with 1 tsp. butter. Pour cider into pan. Cover tightly. Bake 30 minutes. Uncover and baste. Bake 10 additional minutes, until tender but not mushy. Heat Litehouse® caramel dip in microwave for 1 minute on high; stir and heat another 10 seconds. Top with a scoop of vanilla ice cream; spoon Litehouse® caramel dip over hot apples, serve and enjoy!
