Bacon Wrapped Potato Bites with Litehouse Chunky Blue Cheese Dressing

Most of the time I am an organized person but when it comes to Christmas I feel like that goes out the window. Thanksgiving seems to happen and then in a blink of an eye it’s Christmas eve and I’m in full-on panic mode. But not this year because I spent last week tackling all my gift shopping and making a list of parties that my husband and I will be attending so that I could make another list of the perfect appetizers that I will be bringing to share. Topping my list this year are Bacon Wrapped Potato Bites.

If you’re not dealing with any vegetarians or bacon-haters, I guarantee that this appetizer will be gone in a flash. I have never been fond of water chestnuts so that appetizer is not on top of my list, but I decided to replace the water chestnuts with mini potatoes for a better experience. Have you ever seen those tiny little potatoes they sell at the grocery store? They are super adorable and make this appetizer party popping friendly. I even enhanced the overall flavor by tossing the potatoes in a mixture of fresh rosemary, salt, pepper and olive oil before wrapping them up to bake in the bacon.

To complete the overall experience of this appetizer I decided to serve it with a side of Chunky Blue Cheese dressing. Paired with the salty bacon flavor, the dressing gives each bite a cool, creamy finish. I love using the chunky version of this dressing because you get little bits of real blue cheese in every bite!

Ingredients
  • 1 lbsSmall Red Potatoes
  • 2 ½ tspKosher Salt, divided
  • 1 ½ tspMinced Fresh Rosemary
  • 1 tbspOlive Oil
  • 1 eaFreshly Ground Black Pepper
  • 1 lbsFreshly Ground Black Pepper
  • For Serving:
  • 1 eaLitehouse® Chunky Blue Cheese Dressing

Directions

Arrange a rack in the middle of the oven and heat to 400°F.Wash and dry the potatoes. Cut larger potatoes into small, bite-sized pieces but keep them all roughly the same size. Put the potatoes in a medium pot, cover with cold water, and bring to a boil. Season the water with 2 teaspoons of salt. Once the water begins to boil, cook the potatoes until just fork tender, 3 to 4 minutes.Drain the potatoes and put them in a large bowl. Add the rosemary, olive oil, remaining salt, and a few grinds of pepper, and toss until the potatoes are evenly coated.Cut the strips of bacon into thirds. Wrap each potato bite in a piece of bacon, securing it with a toothpick. Put the potatoes on a baking sheet lined with aluminum foil spaced an inch or two apart.Cook the potatoes for 15 minutes, then flip each piece. Cook for another 15 to 20 minutes, until the bacon is cooked through and as crispy.Serve the potatoes immediately along with the chunky blue cheese dressing.
