This is a great alternative to a traditional lettuce salad and is packed with protein and nutrients.
1 medium avocado - diced
1 15 oz. can chickpeas drained and rinsed
1/3 cup Simply Artisan Feta Cheese Crumbles
1 tsp. Instantly Fresh Parsley
1 Tbsp. Instantly Fresh Spring Onion
Juice of 1 lime
Salt and pepper to taste
Place the chickpeas, feta and avocado into a large bowl. Season with parsley and spring onion. Toss gently to combine. Squeeze the juice of 1 lime over the salad along with salt and pepper just before serving.
