Strawberry Avocado Toast

If there is one thing that I’m picky about it is the texture of food. There are days that I hate bananas, there’s just something about quinoa and don’t get me near tofu. I used to be the same way about avocados. I absolutely loved guacamole (who doesn’t?!) but sliced or diced avocados totally grossed me out. Over time my love for avocados has developed and I’m so glad!

I feel like one of the newest foods to hit the market is avocado toast, which is literally just that, avocado on toast. And for such a simple food it is seriously amazing. Add a little salt and pepper and you have a nice little snack packed with fiber, whole grains and nutrients that can keep you moving throughout the day. Avocados contain Vitamin K and C and more potassium than a banana. Not to mention those ‘good fats’ that everyone is always talking about. I’m totally obsessed with this snack.

Taking the classic avocado toast a step further seems to be the trend lately and I thought I would jump on board! I was super excited when Litehouse launched their new pourable line of OPA by Litehouse™ line which includes a delicious Strawberry Poppyseed. This dressing is tart but fruity, a blend that I thought would go perfect with avocado toast. Tossing the dressing with a handful or arugula to top off my avocado toast and then adding fresh strawberries and extra poppy seeds turned my simple snack into an extraordinary snack!

Strawberry Avocado Toast

Serves 2 | Finish in 8 minutes

This recipe takes the classic avocado toast to an entirely new level and turns the classic into a delicious and wholesome snack.


2 slices whole wheat bread
1 avocado
Handful of arugula
1 tablespoon OPA by Litehouse™ Strawberry Poppyseed Dressing
3 strawberries sliced
Poppyseeds (optional)


Toast both slices of bread until they are crisp.
Cut the avocado in half and remove the seed. Using a fork, scrape the avocado from the skin and mash slightly within the skin. Spread ½ of the avocado on each slice of toast.
Toss together the arugula and dressing. Divide the arugula between the two slices of toast and top with the strawberry slices and additional poppyseeds if desired. Serve immediately.
