We are so super excited about the Superbowl this year because our team is playing! I'm only going to say this once. Go Patriots! I live with 1 man and 3 soon to be men, who all expect some messy "man food" on this important day. I'm talking big, meaty, exciting, man food with all the fun flavors you expect to taste while watching football. Replacing beef with a mixture of white and dark ground chicken meat cuts back on not only calories but unwanted fats as well while maintaining a moist and meaty meatball texture. I decided to add some major smoky flavor enhancers such as cumin, chili powder, and chipotle peppers to give the classic smoky flavor usually found in bacon without actually having to add the bacon. The next big calorie cutter? Cheese! Cut the cheese! Wait no, cut out the cheese. Instead top your meatball sliders with a creamy Jalapeno Slaw. Not only do you get the creaminess usually provided by high calorie cheeses but you also get a dose of veggies and a fresh zing from Litehouse's Jalapeno Ranch Dressing.
