Ah February. The air is cold and there is no green to be found on the ground or in the trees. No exciting holidays are approaching and life seems to get boring and uneventful. This is when you start counting down the days to summer. Is it time to pull out the BBQ pit yet?
Let’s slam on the brakes before we crash into the long hot days of summer! I welcome winter’s prolonged stay. Really I do. Warm socks, big sweaters, rosy cheeks, and extra family movie nights are some of winter’s gifts that I’m not yet ready to part with, and how about that winter food? Are we really wishing it away? Slow roasted dinners filled with warm herbs and hearty root vegetables. The aroma fills your house giving it the ultimate “homey” feeling while you welcome the warmth spewing from the oven. This time of year also brings the best prices on hearty filling produce such as kale, root vegetables, and squash. These vegetables allow me to make a meatless meal every week that will keep my kids full and give them enough energy to drive me nuts up until bed time!
Butternut Squash Pasta Bake

Litehouse’s new Instantly Fresh Sage plays a starring role in my Roasted Butternut Squash Pasta Bake. Winter vegetables are tossed in the sage and roasted until sweet and caramelized. A faux creamy pasta mixture is created using an old trick of mine, Greek yogurt and egg. You won’t believe how easy and affordable it is to create this delectable rich pasta bake that can feed a hungry army. The lack of meat allows for extra parmesan in the budget, so don’t go trying to be stingy with the parmesan y’all! Is it quick? Eh, yes and no. The roasting process does take 40 minutes but it is hands off time so really that doesn’t count as kitchen time right? There are many things you can get done in 40 minutes.
