Kale and Sausage Pasta

Every parent needs a good collection of easy and healthy convenient meals for those busy week nights. Kids are hungry after a day at school and are nearly starving after participating in extracurricular activities. This combined with the end of the day exhaustion of hard working parents means dinners need to be fast and easy, healthy is usually an afterthought. My family found ourselves in this exact scenario night after night once our children started going to school.

I started collecting great recipes that I could whip up in a hurry that would also provide adequate nutrition for our growing family. I quickly found that pasta dishes were usually the easiest to cook up in under 30 minutes. While the pasta cooks, a delicious and healthy sauce can be made, then everything simply gets thrown together and served family style. My latest pasta recipe utilizes affordable winter ingredients to keep costs low and bellies full. Kale Sausage and White Bean pasta is full of hearty ingredients that are low in calories and high in nutrients and protein. Turkey sausage is a healthier option than pork sausage, and it's usually cheaper, but will still fill the pasta dish with tons of Italian Sausage flavor that kids love. My family prefers the spicy Italian sausage but sweet would work just as well.

 To keep this dish quick and easy I used Litehouse's Instantly Fresh Garlic. I got the fresh garlic flavor without having to peel, and mince sticky garlic cloves. Just a quick shake of the herb bottle and my pasta is full of fresh garlic flavor. Kale and white beans are also a quick and easy add in to any dish for a little extra heartiness and nutrition. The kale becomes plenty tender after simmering in the sauce making it easier for kids to eat. It also soaks up all of that great meaty flavor from the sausage insuring it tastes great. My kids gobbled this dinner right up giving many thumbs up throughout the meal!

Kale and Sausage Pasta

Serves 6-8 | Finish in 30 minutes

This delicious and healthy pasta dish is the perfect convenience meal for a busy weeknight dinner. Full of healthy kale and hearty white beans this is great for a cold winter night.


1 lb. spicy Italian turkey sausage
4 cups chopped kale
2 shallots minced
1 can white beans drained and rinsed
1 tsp. Litehouse Instantly Fresh Garlic
1/2 tsp. pepper
4 cups chicken stock
12 oz. whole wheat spaghetti
1/4 cup grated Parmesan cheese
1/4 cup fresh chopped parsley


Bring a large pot of water to a boil. Add spaghetti and cook according to package direction. Meanwhile heat a large skillet over medium high heat. Add the turkey sausage and cook until no longer pink. Add the kale, white beans, shallots, garlic, and pepper. Saute until kale begins to wilt, about 3 minutes. Add the chicken stock and bring to a simmer. Simmer for 20 minutes or until 2/3 of the liquid has evaporated. Strain the pasta from the water and add to the sausage and kale mixture. Toss until the pasta is coated in sausage mixture then add the parmesan and parsley. Season with salt to taste then serve.
