Grilled Cilantro Vegetables in Foil

Summer is here and it is time to break out the grill. One of my favorite parts of hot summer weather is barbecues. There is just something about thick, juicy steaks sizzling on the grill that makes me happy. There are many things besides meat that can be prepared on the grill. I love grilling vegetables on the grill but it can be challenging at times. Smaller vegetables can often slip through the grill into the fire below if you aren't careful. One way I have found to make grilling vegetables easier is to grill them in a pocket of foil.
Grilling vegetables in foil not only keeps the vegetables out of the fire, it lets you add herbs, butter and other seasonings to the vegetables. Using Litehouse Instantly Fresh Herbs means that you can always have herbs on hand when you need them without the worry of having them go to waste if you don't use them up fast enough. Since they don't need to be refrigerated, they are great to take with you on camping trips. You can easily add in whatever other vegetables you have on hand. I had a few mushrooms left over that I added to the foil packet. You could toss in carrots, eggplant, broccoli, cauliflower or whatever else you find in the refrigerator. This recipe makes grilling vegetables easy and there is practically no clean up at all. What is your favorite way to grill vegetables?
