Brownie Parfaits Recipe

I love homemade brownies, but you know what I love even more? Brownie Parfaits. They are brownies on overdrive! They remind me a little of a dessert you might see on a fancy restaurant menu. They are perfect for Valentine’s Day with their sweet elegance.
I made a batch of my favorite brownie recipe. You could also use a boxed brownie mix – I won’t judge! Whatever works for you and your schedule.
One tip I have for melting the unsweetened chocolate for the brownie recipes: melt in a microwave safe bowl at 30 second intervals. Stir in between each interval. When it’s almost melted, stir it together until it melts. My chocolate took two minutes in the microwave.
I like to melt it in 30 second intervals so the chocolate won’t seize and burn. Chocolate is finicky sometimes!
The brownies are cut into chunks. You can do this neatly or just rip them apart into pieces. They are all going into parfait dishes so it won’t matter much.
I also made a homemade chocolate whipped cream. Soooo good! I use the 35% milk fat whipping cream since I find it easier to fluff up than the lower milk fat varieties. Add a little cocoa powder, powdered sugar (we call it “icing sugar” in Canada) and vanilla extract. Prepare to lick the bowl when you’re done!

This recipe makes four parfaits. You could stretch into five with smaller dishes. Don’t worry if you don’t have parfait dishes. A bowl or a glass will also work. Even a wine glass would work.
