
1 pkg pre-washed spinach
1 head green leaf lettuce
3-4 boiled red potatoes, sliced
2-3 hard-cooked eggs, sliced
1 cup olives, sliced
1 sweet red pepper, julienned
1 cup grated purple cabbage
1 carrot, grated
3/4 cups Litehouse Bleu Cheese Vinaigrette Dressing (substitute: Litehouse Sweet Red French and Original Bleu Cheese Dressing)
Wash and dry the greens. Arrange on a platter. Arrange the potato and egg slices in a "pinwheel" on the greens, leaving the center open. Mound the julienned pepper, grated cabbage and carrot in three piles in the center of platter. Sprinkle olive slices on top of the potatoes, eggs and greens. Pour some of each dressing over center vegetables and a thin stream over potatoes and eggs. Serve additional dressing separately.
